The next food of our A-Z of Everyday Foods is part of the cruciferous family and is closely related to the cabbage and cauliflower; it is the super-vegetable BROCCOLI.
Cultivation of broccoli began in Italy and was developed from wild cabbage. Its Italian name is “Broccolo” meaning “cabbage sprout”. Another closely related vegetable to broccoli is ‘Broccolini’ which is a mix between broccoli and Gai-Lin (Chinese Broccoli).
The colour of broccoli can range from dark green to a purplish-green variety (which has a higher content of carotenoids). Broccoli Sprouts have become popular due to research revealing a high level of the anti-cancer phyto-nutrient, sulforaphane. Sulforaphane is known as a powerful detoxifier. It helps boost liver detoxification enzymes and has also been shown to cause automatic cell death of abnormal and cancerous cells. This wonderful vegetable also contains anti-oxidant and anti-inflammatory components.
Broccoli has superior nutritional content such as a rich source of Vitamins A, C, E and K; Folic Acid, potassium, calcium, iron, magnesium and phosphorous and is high in fibre and roughage. Due to the nutrient-rich content it may help with and promote the following:
